Macaroni & Cheese

(makes 12 servings)
Ingredients:
- 2.5 Lbs Elbow Macaroni
- 1.5 Gals Water
- 2 Cups Whole Milk
- 1 Cup Half & Half
- 1 Tsp. Vegetable oil
- 1 Cup Unsalted Butter
- 2 Lbs Velveeta Cheese
- 1 Lb Yellow Cheddar
- Salt and White Pepper to taste
In a small pot on, on low heat, add milk, Velveeta Cheese, and unsalted butter. Stir until cheese is completely dissolved. Remove pan from heat and leave off to the side.
In another small pot, put the 1 ½ gallons of water and bring it to a boil. Add the 1 tsp of vegetable oil and 2 ½ Lbs. of macaroni, lower the heat and cook for about 15 minutes.
Strain water, put macaroni back into pan, and stir in cheese sauce, add salt and white pepper to taste.
