Redbones Texas Chili

(serves 10)
Ingredients:
- 7 lbs brisket, trimmed of fat and cut in 1 1/2" cubes
- 6 medium onions, sliced
- 1 cup tomato paste
- 2 tsp Paprika
- 6 bay leaves
- 1 tsp black pepper
- 1 tsp cayenne pepper
- 1 tsp red crushed pepper
- 1 Tbs minced garlic
- salt to taste
Put cubed brisket in casserole, cover with water and simmer on top of the stove until 1/2 done - about 1 hour.
Add all the other ingredients and cook for another 45 minutes on medium heat until meat is tender.
Serve in bowls topped with shredded cheese - a combination of cheddar and mozzarella - and chopped scallions - enjoy!
